The Lessons From The Business Trip To India
I recently spent 10 days in India visiting Mumbai and New Delhi with a client visiting with chain operators and industry experts as well as private equity groups. India is the second fastest growing foodservice market in Asia Pacific behind China and accounts for about 10% of a one trillion-size industry. Most forecasters expect that India and China combined will exceed 65% of the entire Asia Pacific region over the next 10 years. It is a relatively new market with a huge growth potential and significant business scale going forward. What did I learn by being on the ground of this US$100 Billion market for almost two weeks?

First, on a national level vegetarians make up about 50% of the dining out consumers and all restaurant chains I met reported their vegetarian menus to be between 40-50% of total sales. Vegetarian Indian food is very delicious so it goes without saying that any overseas chain needs a vegetarian strategy before entering this market. Bringing in a local culinary team to help is a must.


India Is A Vast And Complicated Market
One industry expert told me that for every 100 miles you drive you would encounter a different cuisine. The only truly national dish is biryani, a rice based mixture of mutton, chicken or fish. It should be no surprise then that many of the larger Indian food chains focus on this food type.
Infrastructure and supply chain are not great but getting better. The chains that succeed first solve these two challenges. There is a good business opportunity for logistics companies that focus on the food supply chain and can deliver fresh produce to restaurants and hotels throughout the country. Menu localization is a must to be successful given religious influenced dietary habits, local palate preferences and the lengthy import process.

Beef cannot be found on almost any restaurant menus in India today. You will not find beef burgers at McDonald’s or Burger King. Several chains sell water buffalo burgers but their sales are declining in many areas and in some States their sale is banned. I found a beef burger on a Chili’s menu in New Delhi but was told it was not available when I tried to order. If you are a steakhouse or bulgogi chain, you might not want to focus any attention on this market.

Western food is quite popular given the historical colonization by the British. American casual dining and Italian restaurants are busy. There are more than 125 Pizza Hut full service restaurants operating in 34 cities today. Pizza Express is fairly new to the market but have 8 stores to date under a joint venture in Mumbai and New Delhi. Of course the American QSR chains like KFC, Pizza Hut, McDonald’s and Burger King have large potential given price points per person below US$ 2. Domino’s is the leading QSR player with over 900 stores but prices are very low- entry level personal pizza is about $1.50.

Most international chains are franchised to local groups. YUM has their own company in India but the majority of KFC and Pizza Hut stores are franchised to large industrial groups. There are rumors in the market that these groups are not pleased with the financial returns and eager to sell out.

India has many well-established groups that are eager to enter or expand the foodservice space. They all speak English and are generally western educated and abide by the rule of law. However, they are very hard negotiators and no longer willing to pay high fees for unproven concepts.

Sushi is becoming more popular and could become a big cuisine going forward. The sandwich category is also growing. Subway already has more than 600 stores nationwide and there are many small regional sandwich and wrap chains popping up. Bakery also has very high potential given the familiarity with western cuisine.


Korean Food Remains Quite A Mystery
Unfortunately Korean food is not easily found in the big cities and remains quite a mystery to the Indian consumer. It will be tough to establish a presence there for a Korean food chain but coffee and bakery chains should find it far easier to find local partners to expand under a master franchise model. Fried chicken & beer concepts may also find acceptance as well.

India is big, chaotic, and challenging but worth the attention if you have the right concept that consumers can accept. Korean foodservice companies should have a look but proceed cautiously.

최근 나는 체인점 관리자들, 업계 전문가들, 사모펀드 업체 인사들과 함께 열흘간 인도의 뭄바이와 뉴델리를 방문했다. 인도는 중국에 이어 요식업계의 성장률이 아시아·태평양지역에서 두 번째로 빠르게 발전하는 나라로 10조 원 규모의 전체 산업 규모에서 약 10%를 차지한다. 대부분의 전문가들은 향후 10년 이내 인도와 중국을 합친 규모가 전체 아태지역의 65%를 넘게 될 것으로 전망한다. 엄청난 스케일의 성장과 막대한 가능성이 기대됨에도 불구하고 상대적으로 새로운 시장이기도 하다.
미화 1000억 달러 규모의 이 시장을 2주에 가까운 시간동안 방문하면서 내가 과연 무엇을 배웠을까?


첫 번째. 전 국가적으로 봤을 때 전체 외식 소비자의 약 절반이 채식주의자다. 또한 전체 레스토랑 체인들의 매출 40~50% 또한 채식메뉴가 차지한다. 인도의 채식 음식은 무척 맛이 좋다. 따라서 해외 체인업체가 인도 시장에 진입하려면 그전에 채식주의자에 대한 전략을 세워야 함은 말 할 필요도 없다. 현지의 요리 전문가 팀의 도움을 받는 것도 필수적이다.


무척 광범위하면서도 복잡한 인도 시장
한 업계 전문가는 내게 “인도에서 운전해서 백 마일을 달릴 때마다 새로운 요리법을 만나게 될거요.”라고 조언해줬다. 유일하게 전국적으로 먹는 음식은 비리야니로 쌀을 기본으로 양고기나 닭고기, 생선을 섞어 조리하는 음식이다. 인도의 대형 요식업 체인 업체들의 메뉴가 이런 종류의 음식을 주로 공략한다는 사실은 놀랄 것도 없다.

기반시설이나 공급 체인이 그다지 잘 돼있는 편은 아니지만 점점 좋아지고 있다. 성공한 체인들은 이 두 가지 난제를 잘 극복한 경우다. 식자재 공급 체인에 집중해서 전국에 퍼져있는 각 레스토랑과 호텔에 신선한 재료를 공급할 수 있는 유통업체라면 사업 전망이 꽤 밝다. 종교의 영향을 받는 식생활 습관과 현지식 선호, 장기간의 수입과정을 고려해봤을 때 현지화 전략은 필수적이다.

현재 그 어떤 레스토랑에서도 소고기 메뉴는 찾아볼 수 없다. 하다못해 맥도날드나 버커킹에서도 소고기로 만들어진 햄버거는 찾아볼 수 없다. 여러 체인점들에서 물소로 만든 햄버거를 팔고 있지만 매출은 하향곡선을 그리고 있고 여러 지역들과 몇몇 주에서는 그마저도 금지돼 있다. 뉴델리에 있는 칠리스 매장 한군데에서 소고기로 만든 햄버거 메뉴를 발견해 주문하려 했지만 공급이 불가능 하다는 얘기를 들었다. 만일 당신이 스테이크집이나 불고기집 체인을 고려한다면 이 시장에서는 관심을 떼는 편이 낫다.

영국 식민 역사의 영향으로 서양식은 꽤 인기가 높다. 간단한 미국식 식당이나 이탈리아 레스토랑도 꽤나 바쁘다. 현재 34개 도시에 125개의 레스토랑 형 피자헛 지점이 운영 중이다. 피자 익스프레스 사업은 업계에서 다소 새로운 타입의 비즈니스지만 합작투자의 형태로 뭄바이와 뉴델리에 현재 8개의 업체가 영업을 하고 있다. 물론 KFC, 피자헛, 맥도널드, 버거킹과 같은 미국식 패스트 푸드 업체들이 2달러 이하의 메뉴를 제공하는 것을 염두에 둘 때 잠재성은 꽤 크다 하겠다. 도미노가 패스트푸드 업계의 강자로 군림하며 900개 이상의 점포수를 자랑하지만 1인용 피자는 약 $1.5로 매우 낮은 시장 진입가격을 유지하고 있다.

대부분의 다국적 체인들이 현지 회사들에 의해 프랜차이즈화 되고 있다. 얌(YUM)은 인도 내에 자회사를 두고 있지만 대부분의 KFC와 피자헛 지점들이 규모가 큰 업계 그룹들에 의해 프랜차이즈 됐다. 이 그룹들이 수익률에 만족하지 못해 지점들을 처분해버리고 싶어한다는 소문도 돌고 있다.

인도에는 요식업계로 진입하거나 영역을 확장하려는 견실한 기업들이 많이 있다. 그들은 영어를 할 줄 알며 대부분 서구에서 교육을 받았고 법을 준수하는 편이다. 그렇지만 협상을 하기에 무척 까다로우며 증명되지 않은 일에 더 이상 높은 비용을 지불할 마음이 없다.

스시는 점점 인기가 높아져가고 있으며 앞으로도 요식업계의 큰 축을 이룰 가능성이 있다. 샌드위치 분야도 성장하고 있다. 서브웨이는 이미 전국적으로 600개 이상의 매장을 갖고 있으며 많은 소규모 동네 샌드위치와 랩 체인이 생겨나고 있다. 서양식에 익숙하다는 점을 고려했을 때 제과업계 또한 상당한 가능성을 갖고 있다.


미지의 영역으로 남아있는 한국 음식
안타깝게도 한국 음식은 대도시에서조차 쉽게 찾기가 힘들며 인도 소비자들에게는 미지의 영역으로 남아있다. 한국 음식이 존재감을 키우려면 상당한 고전이 예상되지만 커피와 제과 체인은 독점사업권을 주는 방식으로 사업을 운용하면 훨씬 쉽게 현지 파트너를 찾을 수 있을 것이다. 후라이드 치킨/맥주점포 또한 현지화할 만하다.

인도는 거대하고 혼란스럽고 도전해야 할 것이 많은 시장이지만 현지 소비자가 받아들일 만한 콘셉트를 갖고 있다면 주의를 기울여 볼만 하다. 한국 요식업계들은 인도에 대한 관심을 키우는 한편 신중하게 접근할 필요가 있다.
